Nicholas as served two years during high school as a research apprentice in the College of Agricultural, Consumer and Environmental Sciences at the University of Illinois at Urbana-Champaign, conducting studies on childhood obesity and genetics. This experience has led him to develop a a passion for a career in food science and human nutrition career as a food scientist. He hopes to eventually establish a non-profit to educate and assist single parents about maintaining a healthy lifestyle for their children. Despite the obstacles of living paycheck to paycheck in a single parent home, he is “confident that I will be able to finance my education through hard work, determination, and a positive mindset.”
